How to vinify a red wine ?
For thousands of years, grapes have been transformed into wine through a natural process called vinification. What are the steps of this transformation process? How is red wine made?
Initially, the process ofelaboration of the red wine begins with the harvest. After a whole year of patience and monitoring, we harvest the grapes from the vines, which must be in impeccable condition. Some vines are harvested by hand, others by machine. Once the best bunches have been selected, the grapes arrive at the cellar. The different processes can finally begin: destemming and crushing, maceration, fermentation, pumping over and the punching down, running off and pressing. Then will come the different maturings (in vats or in barrels) then the bottling.
Now, we are going to present you all the steps of the wine making in barrels. These steps allow us to guarantee a quality wine to our customers.
Vinification in barrels
For some of our red wines, we carry out a manual manual harvestThe grapes are harvested by hand, destemmed, not crushed, and placed in vertical 500-liter barrels (without the top apron) with flags* to thermoregulate the fermentation.
We carry out pigeage twice a day in order to re-suspend the grape skins that rise to the surface of the barrel. This allows a better extraction of the aromas and structure of the future wine.
Once the fermentation is finished, we continue a maceration called "sous marc" for about four weeks. The wine is then ready to be sub-strained and put in barrels for maturation.
